I have always loved to feed people–not literally with a spoon of course, but by the spoonful. Some of my favorite recipes are sweet treats. I know we all need to be careful not to consume too much sugar, however it’s important to have things we enjoy to look forward to, and dessert is one of them.

Brownies were the first thing I was permitted to make. My mother never trusted me to fix any significant food, but she figured I could be trusted to bake something simple. These blond bars are simpler even than chocolate ones, being made all in one pan, and they are very true to their name: Disappearing Caramel Brownies. The recipe can easily be doubled for a crowd.

Disappearing Caramel Brownies

  Bake at 350 in a metal pan or 325 in a glass one, 20 mins till firm to touch.  Do not over bake or though still tasty, they will become like rocks!

Ingredients:

1 cup brown sugar

¼ cup butter

1 egg

1 tsp baking powder

¼ tsp salt

½ tsp vanilla

¼ cup chopped nuts

1 cup flour

Method:

Heat butter, sugar in saucepan.  Stir slowly till sugar is dissolved, then a little longer to have it somewhat liquid.  Do not boil.  Cool slightly.  Add beaten egg, salt, vanilla, baking powder, nuts and flour. Stir well to incorporate all the flour.  Spread in 8 or 9 inch pan.  Bake for 20 Minutes. Press lightly with finger. Ovens may vary. If it makes a slight dent, remove, otherwise bake one or two more minutes. Rest for 10 minutes then cut into 16 squares cool in pan and remove when ready. These bake up well with alternative or gluten free flours also.

If you make a double batch bake a wee bit longer, perhaps 10 minutes more in a 9X12 pan. Do not over bake or they will be difficult to cut, let alone chew.

These cookies are very quick to make and very tasty. You can use a low sugar or fruit sweetened jam to reduce sugar. I call them Jiffy Jam Delights. Unexpected company coming? No problem! You can mix and bake these simple cookies in a half hour total.

Jiffy Jam Delights

Ingredients:

1/2 cup butter (no substitutes, please)

1/3 cup sugar

1 egg

1 tsp. vanilla

1/4 tsp. salt

1 2/3 cups all purpose flour

2/3 cup jam (raspberry preferred by us).

Method: Beat butter, sugar well. Add egg, vanilla salt. Blend in flour.

Drop from a teaspoon onto greased sheets. Make a dent in the tops of the cookies and fill with a half teaspoon or so of jam. Bake only until firm and dry to the touch.

Bake at 375 for 10 minutes on a well greased cookie sheet. Makes 30 to 36 delicious cookies in a half hour from start to finish. Cool before eating. Jam is very hot.

Until recently, whenever I could, since I was a small child, I crafted my Valentine’s Day cards. It gave me great pleasure. I had and still have a few lacey paper hearts, stickers with cupids and similar valentine symbols, and other appropriate decorations. I’d fold plain paper in quarters and glue these down, arranging them in fun patterns and writing humorous or sentimental words inside. Alas, I no longer have the time or energy to do this. I do, however have access to a wonderful card program that I enjoy using, so I still have a good resource.

As a young child I looked forward to Valentines’ Day at school. Cookies in the form of hearts were often served and the big red and white crepe paper covered box to be filled with simple cards was placed prominently on the teacher’s desk. Later on, when I had my own children, I helped them make their cards and mail them to grandmothers and aunts, as well as prepare cards for classmates.

The sentimentality of Valentine’s Day has of course been commercialized like other holidays, yet somehow for me that does not detract from it as the excess around Christmas can. I enjoy the displays of hearts and candy, and I’m happy I don’t have to endure endless Valentine carols. It is interesting to note that Valentine’s Day has a long history of celebration behind it.

During this month in pre-Christian times the Greeks honored Aphrodite, goddess of love and beauty on the 6th, as well as Hygeia, goddess of health and healing on February 26th. Artemis, creatrix, midwife and protector of the young was honored from the 7th to the 9th, and Diana had a Roman festival on the 12th day of the month. Februata, the Roman Goddess of love for whom the month is named, signifies the fever of love. Our Valentine’s Day celebration is a modern dedication to love compiled from customs taken from the original celebrations of these times, filtered through the attempts of the Roman Catholic Church to Christianize them.

Traditional says St. Valentine (apparently there were several of them and no one is quite sure which one is referred to by this story) began the making of Valentines by sending around heart shaped leaves with messages on them. Prior to this the Romans celebrated a holiday where young men and women would draw names to see who might pair with whom for the festival they were celebrating. The Roman Catholic Church tried to take over this custom by substituting the names of saints for partners, however, their version never really caught on.

 Valentine cards began being made and sent in the eighteen hundreds and Valentine postcards arose in the early part of the twentieth century and were extremely popular as well. Many of these are now collectors’ items, fetching high prices on Ebay. Whether you make or buy your Valentine cards, you are continuing a tradition that has spread joy and happiness for many years.

Heartwings Love Notes 1070: Small Victories

Heartwings says, “Being grateful for small victories is better than complaining about any losses.”

I’ve read that one of the first skills a child learns is to let go. They must be born with the instinct to hold on, as any mother with long enough hair knows. It makes sense, because they need o hold onto their mothers or anything else to keep from free falling into danger. Once they learn to let go, they delight in doing it. I remember my little ones sitting in the family high chair gleefully dropping things onto the kitchen floor.

We all grow up and learn various skills that serve us until the day they don’t. I clearly remember learning to tie my shoes. My dear nurse Emily had me stand bent over my shoes until I learned to do it. I was in nursery school, aged three, perhaps almost four, depending on the time of year. Called the Woodward School, it had blue double doors. I can see them still.  My finger dexterity was never to become perfect, however I did get good enough to tie laces or untangle knots, until one day I developed Parkinson’s and the dexterity dwindled.

I remember how difficult it was in first grade trying to improve my penmanship. In time I managed to learn to write at least reasonably well, until once again, Parkinson’s took over and unless I focused very carefully my handwriting would shrink more and more as I wrote a sentence. However, I did find that by printing rather than using cursive that my writing shrank less. The ability to focus and write slowly has enhanced the clarity of my handwriting, and this is something for which I am grateful. It is a small victory in the midst of abilities that without my being able to stop doing so, are beginning to fade.

I have had to give up the pride I once took in skills I had worked on and developed. Being able to do things I once took for granted as accomplishments has transmogrified into taking pride in the smaller victories I am able to manage. I had a teacher who once said, “Rather than lament that roses have thorns, be glad that thorns have roses. I remember that the roses in my father’s garden had large thorns yet they smelled wonderful. Often the roses of today have no thorns to speak of, yet they do not have much of a scent either. Still, they are lovely.

While I have lost some of the abilities of which I was once so proud, I have gained others for which I am grateful. I have become more patient because I must be, otherwise I would be all too frustrated. Being patient with myself means I am able to be more patient with others. I have also become more compassionate, and now I have more compassion for others and am more forgiving. While these could be considered small victories, they are also big steps in being more comfortable with myself and kinder, and by extension, with others as well.

May you remember to take pleasure in your personal victories no matter how small.

Heartwings Love Notes 1068: Avoiding Expectations May Be Wise

Heartwings says, “The future depends on how the present  proceeds.”

At our New Year’s Day gathering Stephen and I were sitting together on the sofa when a friend began taking our picture. The light was reflecting off my eyeglasses so he asked me to take them off. I heard the echo of my dad’s voice saying, “Take off your glasses and look pretty.” I laughed to myself and removed them. These days, confident in my appearance and no longer impressed by my father’s prejudice, I am happy to be photographed with them either on or off. My expectations have changed.  

Expectations often dominate a new year. After all, that’s how we express our resolutions.  These may or may not be realistic, fall by the wayside, or bring results. However, they may be doomed by our expectations. This failure comes about as a result of the unconscious programming behind them. Our programming is the unremembered precepts we grew up with. They are often reflected in our self talk: my weight is inherited from my mother’s side of the family or I am lazy and uncoordinated.

Do you listen to yourself? Do you hear how you respond mentally to plans? To resolutions? Here’s the thing: At the start of the new year many resolve to lose weight or exercise more. If they were listening to their inner responses, here’s what they might hear: “I’ve tried this before and failed, why bother trying.” Or, “I’ll just fail again; it’s too difficult to exercise, and anyway, I don’t want to take the time.” If the resolution involves depriving oneself of the pleasure of eating, or projects the boredom of exercise, where’s the incentive? These may be the negative expectations that arise when resolutions are expressed.

Or it may be possible to avoid expectations, both positive and negative altogether. There is a way to do this. It comes from the practice of Buddhism and is called beginner’s mind. I once had a yoga class with a teacher who said his mantra—a saying to help one grow spiritually, was “I know nothing, I want to learn.” This is an excellent way to express beginner’s mind. Back when I first heard this I scoffed, thinking that I was creating an affirmation of stupidity. This was incorrect. By affirming I know nothing,, as I later realized, I was clearing the slate of the expectations, definitions, or prejudices I might carry in my mind.

Now when I look at the New Year I see it through a lens of confidence, sure I approach it without any idea what will happen. However, regardless what does, I know I will grow from the experience because I wish to. My life may or may not go in a direction I am prepared for, That’s not important. What is, is that I greet any and all happenstance without prejudice but with the confidence that I will benefit if only by learning not to do something or else to do what is needed. That way a new year is truly a blank slate I can look forward to writing on, just to see what happens next.

Heartwings Love Notes 1066 Change is the Nature of the world

Heartwings says, “It’s not easy to adjust to unexpected changes.”

Ever since we moved to Grafton, Stephen and I have been going to a restaurant in the center of town. That’s more than thirty years. There have been many changes there, some of which kept us away from it, some of which did not. The other day we walked in and there had been another change. This one we were not happy with. The tables and chairs where we usually sat had been replaced with high bar stools and high tables, and the comfortable, regular tables had been moved to the bar section. There were other changes that had created a kind of game room atmosphere, and the restaurant we were used to was completely gone.

We stayed to dine however the menu too had changed considerably and pretty much guaranteed we won’t be back any time soon. I was sad because this place, the source of so many fond memories, had disappeared from our lives. This was only one of the many changes that have been happening lately for us. The elderly neighbor who had lived in the apartment next door left to be with family. The building changed hands, and our landlord who was also our eyeglass doctor retired. The new landlords are having her former apartment completely redone, which has generated much hammering and occasional whining of machinery. Fortunately, the workers do not start until nine o’clock, for which we are grateful.

I won’t bore my readers with more details, however, these are only a few of the most recent changes in our lives. For myself, the changes in this past year have been about adjusting to Parkinson’s Disease and the challenges it has presented. This has been challenging for Stephen as well, though not in the same way. Both of us have been used to my being able to do certain things I can’t any more. He is more than willing to help out when necessary, and for that I am extremely grateful.

Living with what is rather than what was or how I wish it could be can be tricky. I know I must focus on what I can do rather than lamenting what I can’t. I also know that with Parkinson’s, every day can present a different set of circumstances and the only way to deal with it is to go with the flow. While I have practiced this way of living and the necessary attitude that helps produce it for many years, my current situation is still another turn of the spiral. Of course, it presents a greater opportunity to learn and to grow. However, that being said, it is still something to cope with. I hope to do the best I can and to help others in some way in the process. Chop wood and carry water, as the saying goes, is my mantra these days, and I will add, stay in the present moment so I can flow with the next changes.

May you be able to adjust to the changes that come to you with grace and ease.

Heartwings Love Notes 1065: Future Shock Is Real

Heartwings says, “It is not easy to adjust to rising prices as one gets older.”

Some of my older friends may feel as I do: what happened to money? In 1970, a book called Future Shock by Alvin Toffler gained a lot of publicity. Perhaps it ought to be reissued. It describes how persons are affected by changes, especially financial, over time. For instance, when I was a child I could buy a comic book for a dime and an ice cream cone for five cents. When I used to take my little ones for a cone it was a quarter. I don’t have to tell you, times have changed. What is more shocking is by how much any item seems to increase.

When McDonald’s first began to raise its golden arches in New England, there was one near where I took the children for swimming lessons. A dollar bought us a drink, a burger, and fries, with change. Now there are many similar venues and you can’t find anything for a dollar in any of them. Of course, to the twenty-somethings who work and may lunch at a fast-food restaurant, that is business as usual. To families trying to eat healthy meals, it’s an occasional treat, because restaurants cost so much more than they used to.

Not only restaurants but everything costs so much more, most especially to someone like me who grew up licking a five cent ice cream cone. I remember my grandmother would save up her pennies and when they filled her hands, she would give them to me with a simple ritual she had either devised or learned—I never asked her where it came from. Holding her closed hands full of pennies over mine, also closed, she would say, “Hold fast all I give you three times, then open her hands and spill the pennies into mine, held open in expectation. I was delighted with my small hoard and spent it on whatever took my fancy at the time.

Coping with this difference between then and now, has for me become a work in progress. I am a firm believer in the abundance prayer and also in the principle it represents: I will always have enough for what I need. This grows increasingly more difficult. “Reality” in the form of visits to the supermarket, or a meal at a restaurant would seem to contradict this. Yet why should I not believe? My abundance need not falter or fail to keep pace with inflation. The child that treasured her pennies needs reassurance, and only I can give it, which I do.

So, when doubt creeps in and I wonder how to cope, I repeat my prayer ending with the affirmation that all is well for me and likely to remain so. Then I do what I need to do and carry on. So far, it seems to be working, let’s hope it continues.

May you deal creatively with future shock if and when it arises.

Heartwings Love Notes 1060 Birthdays are Markers on the Highway of Life

Heartwings says, “When you take note of the milestones, you know how far you have traveled.”

I remember my mother when she was in her late eighties shaking her head and saying, “How did I get to be this old?” Now I am celebrating my eighty-seventh birthday and thinking and saying the identical words. Years, decades, days have melted and become one past without much definition. Where did the time go, and how did it pass so quickly? As one friend of mine often says, “Beats me!” It seems as though each day or even week slips into the past and immediately shrinks or dwindles to practically nothing. Perhaps I’ll write a poem about that. I’ve written lots of poetry on the theme of time and all that pertains to it.

 I’ve considered collecting the poems into a chapbook, if I can somehow carve out the time it takes to discover, select, design, and proofread them for the pages. I suppose I could, yet my days are pretty full as it is with cooking, doctor’s visits, and taking care of the needs of the moment. I do no cleaning fortunately, because I have a wonderful person for that. Stephen helps when he can with what he can, for which I am also grateful. These daily doings, the minutiae of life blend themselves into my time so seamlessly I find it difficult to catch hold of any part of a day without using considerable effort.   

Sometimes I try to locate the year such-and-such happened and shake my head and sigh. I can’t find any landmarks to tie it to. There are some important milestones, however that do stick in my memory, and I am grateful for them: My high school graduation, the year Stephen and I met and the year we married, my children’s birthdays and those of other family and friends. I have two Birthday twins though only by date of course. I did mark one recent birthday with a zoom party—my eighty fifth, so people in Italy and those in California could both attend without traveling. I like to celebrate birthdays–mine, and that of others. I believe it is important to mark the years as they pass.

At one time I remember I thought fifty was old. Now someone fifty is to me in the prime of life. I can recall my mother saying “When I was in my fifties, I could do anything.” I could say the same now. The hourglass that marks my time has lots more in the bottom than it did then, and my personal, physical self is commensurably unavailable. Yet I can make the most of whatever time remains to me, and that is my task these days. I will explore the potential for doing that and then at least I may find it easier to mark the milestones on the highway of my days.

May you find many fine milestones to enjoy as your days and years pass.

Hoop Skirts and Test Patterns

I find fashion to be endlessly entertaining. When you live as long as I have, you have seen many trends come and go.  For instance I’m always amused when I see people of every size walking round in tight clothing. Were she still alive my mother would be shocked and making comments. As I was growing up, at most clothing might be tight around the bust and waist, but not anywhere else. Too, as if pregnancy was not quite proper, one wore tent like garments as soon as there was a bulge. Ball gowns were bolstered with stays and wedding gowns were voluminous and relatively modest.

Recently I was looking at a pretty formal gown in a consignment store and it brought back memories of ones I used to wear back in the days when formal dances were a part of my life. I didn’t go to a school that featured proms, however there was an annual series of dances held by a woman who ran a dancing school for grade school boys and girls. These dances were an extension of her classes and held for high school age students in the area.

She had very strict rules for the young ladies who wanted to participate. Gowns had to be of a certain type, and nothing too bare or plunging was permitted. This starchy New England matron who ran the dances was also particular about our weight. My dear mother put me on a diet that summer so I would conform to the ideal held out for those who wished to attend. “I don’t want any wallflowers at my dances,” she was known to say.

The dress I was looking in the consignment store at was a strapless, full length gown. The skirt was fairly narrow. I smiled to myself, remembering the hoop skirt that went under one of my first full skirted formals. How difficult it was to sit down without the darn thing flying up in the air, taking my skirt with it, revealing my gartered stockings to the world. There were other uncomfortable petticoats, starched and stiff that came later. My mother would laugh and say sometimes one must suffer for beauty. Although she wore a girdle for years and tried to get me to wear one, I refused to.

Along with hoop skirts and starched petticoats, no one born today or even many born a while ago know what a test pattern is, nor has seen one. When my parents got our first TV, there were no programs before around 4 o’clock in the afternoon and after around midnight at night.  All that was on the screen otherwise was a black and white test pattern from the different TV stations.

There were no color TVs. Nor was there color programming! Movies were shown on Sunday afternoons and I remember before we got our TV, the joy of watching them at a friend’s home. In those days a comic book was ten cents, and I wasn’t permitted to buy one but I could read hers. Having lived a long life, I can recall much that no longer exists except in the museum of memory. It’s fun to visit there occasionally, though I’d never want to live there all the time.

Giving Love at Christmas

My mother wasn’t much for cooking, though she considered it her duty to serve us good, nourishing food. I don’t remember her ever baking anything sweet. She didn’t care for desserts; she considered them unnecessary and fattening. When I was old enough for her to trust me in the kitchen, she encouraged me to bake simple items like brownies or other easy recipes. Unlike her I truly enjoyed cooking and was happy to make what she permitted me to.

Once I had a family to bake for I broadened my repertoire and learned to make pies and cakes as well as cookies. However cookies were my favorite to make because they went farther. I used to count and divide up the cookies and each child knew what they could have. Because I was home with the children anyway, it was fun to try different recipes. Eventually I created a small Cookie Cookbook with my favorites that I still use today.

Although my family is grown and I no longer bake cookies regularly, every Christmas I make up several batches and create plates to give people who have been helpful or kind to Stephen and me in the past year. The newspaper delivery people who bring the newspaper to our floor, the ladies of the library where we take advantage of their services all year long, the fine gentlemen of the garage where we take our car for repairs and upkeep, and a few others I want to acknowledge for their kindness.

Favorite cookie recipes I usually make include my Disappearing Caramel Brownies, Jiffy Jam Delights, and Unexpected Company Bars, all reliable and relatively easy to make recipes. This time of year there are cookie recipes everywhere to be found, and while these are my personal favorites for giving, those with more time and energy than yours truly might make cut out cookies to decorate or even more fancy treats. If you want one of my recipes, please let me know which, and I will email it. To my way of thinking however one wishes to express love is valid. Spending time on a gift is one of my favorite ways.

While feeding people is one of the ways I use to express my love, I also appreciate recipes that take less rather than more time, yet still provide delicious tasting healthy food. I also collect recipes from others when they have something unique and special to share. Sometimes they even write them out for me. I have loose leaf notebook where I keep these, along with others. Within its plastic sheeted pages are pressed their treasured, handwritten pieces of paper.

The following recipe wasn’t written out by my late friend because it was so simple. Avocado and Grapefruit salad requires one grapefruit and one avocado per two people, so if you are serving a family you need to double or triple, depending. Think kind thoughts as you peel and section grapefruit, removing membrane and preserving juice. Cut in half, remove seed and section one avocado into slices. Combine all, add a tablespoon or two of a good tasting olive oil, stir well, chill slightly, and serve with love for the holidays or at any time at all.

 

Making My Own Music

A musician by avocation, from the time I was a young child I was usually involved in some kind of music making. I’ve always loved to sing, and I can remember singing to my mother when I was quite small. At my grade school, weekly music classes the teacher played the piano as we sang British folk songs and music from Gilbert and Sullivan, typed and collected into a loose leaf notebook. Later the same teacher gave me private piano lessons. These ended after two years for two reasons: I found the practice songs to be boring and my mother, an amateur musician and child prodigy on the violin, disliked my fumbling attempts at learning the piano. She didn’t even like it when I played around on the piano keys, making my own music for myself. She would scold me for “making noise” as she called what I thought of as music.

Later I sang in various choruses at various schools and then in my church choir. To my delight one year my then husband bought me a guitar for my birthday. I began teaching myself to play. There followed a number of years playing and singing in coffee house, at hootenannies, and then professionally for parties and special occasions. I even volunteered at the local hospital, playing for the patients every week or so. My mother seemed pleased that I was following in the family musical tradition. Encouraged by her, and a poet by inclination I began to write my own songs. The melodies were simple, reminiscent of the many folk songs and hymns I had sung over the years.

Although I enjoyed playing the guitar, from the time I was a young child the idea of playing the harp had attracted me. However the many strings of the large harps looked difficult compared to the guitar and surely transporting one would be a nightmare. Then I injured my shoulder and because of the position required for me to play it, had to retire my guitar. After reading many articles on the importance of keeping the older brain alive, and disliking the recommended suggestion to do crossword puzzles, I decided to try a smaller folk harp. Searching the internet I discovered a lap harp with a playable nineteen strings and purchased it from the maker along with a book to learn from.

I spent a respectable amount of time teaching myself the initial songs and techniques. As I advanced, the lessons became increasingly difficult. I realized I was losing interest in playing. I felt frustrated and began to neglect my harp, even allowing it to get out of tune. My mother’s former diatribes from the days I used to play on the piano rather than practice my lessons had come back to haunt me. Then one day I realized I didn’t have to play actual songs, I could do ass I liked. I could just enjoy myself, making musical sounds; I could play for fun. I began to do that. Spontaneous tunes emerged in my head and then from my fingers. Now playing my harp has become a treat and the music I make from my heart has become a daily joy.
