A Cake for All Occasions

Grandmothers 3, cakeMy mother wasn’t one for desserts and she didn’t like to bake, so if there was something to be made in the oven, she occasionally enlisted my help. I was also allowed in the kitchen of a friend who visited her grandmother in the summer. Her grandmother had a cook who was kind enough to let us mess up her tidy domain, so my friend and I spent happy hours making brownies.

In those days my repertoire was limited; however, I was always happy to be allowed to bake. I still enjoy it, though these days my time is more often devoted to writing than to baking–and there are always the calories to be considered. Lately it’s been too hot to do so, but I needed a cake for Stephen’s birthday, so I went looking for my special recipe: Vinegar Cake.

While it is counterproductive to start the oven in the midst of the summer heat, this cake won’t take long. Quickly put together, it is easily made into whatever kind of a dessert you wish to serve. When I made it was for Stephen’s family birthday party, there were only a few of us to enjoy it. It is such a simple recipe that if you are pressed for time, as long as there is enough time for it to cool, it can be made shortly before you need it. Being without eggs, it is good for vegans. Do not be put off by the title.

Preheat oven to 350, grease an 8X8 square baking pan. This cake is fairly thin, and is nice and chocolaty. It really needs no frosting, but I include a recipe in case.

1 1/2 cups all-purpose flour—gluten free baking replacement, or wheat based

1 cup sugar

1 tsp baking soda

1/2 tsp salt

3 Tbs cocoa powder (I added another) plus more for dusting top

1 Tbs vinegar

1 Tbs Vanilla Extract

1 cup warm water

6 Tbs Vegetable oil

Mix dry ingredients in a medium bowl, mingle wet ingredients. Make a well in the dry ingredients and add all of liquid ingredients. Mix well. If batter isn’t liquid enough, add water a tablespoon at a time until you get a thin batter. This cake is very moist. Bake in greased 8X8 pan in 350 preheated oven for 25 to 30 minutes or until a wooden pick in the center comes out clean and edges have pulled away slightly from the pan–this could take up to 35 minutes. Or bake in cupcake cups, a little less. Dust to your satisfaction with cocoa powder. I used a sieve and stirred the cocoa powder in it to make it come out evenly.  Serves 16 cut in squares, or makes 12 cupcakes.

If you are using a gluten free flour or don’t want lumps it might be good to sift the ingredients together. It makes a better texture for the cake. For a simple frosting, mix 1 cup confectioners’ sugar with 2 Tbs soft butter and add 1 tsp vanilla and some milk or cream until spreadable. You can cut it in half and make a layer cake to serve 6 or 8.

 

Hoop Skirts and Test Patterns

I find fashion to be endlessly entertaining. When you live as long as I have, you have seen many trends come and go.  For instance I’m always amused when I see people of every size walking round in tight clothing. Were she still alive my mother would be shocked and making comments. As I was growing up, at most clothing might be tight around the bust and waist, but not anywhere else. Too, as if pregnancy was not quite proper, one wore tent like garments as soon as there was a bulge. Ball gowns were bolstered with stays and wedding gowns were voluminous and relatively modest.

Recently I was looking at a pretty formal gown in a consignment store and it brought back memories of ones I used to wear back in the days when formal dances were a part of my life. I didn’t go to a school that featured proms, however there was an annual series of dances held by a woman who ran a dancing school for grade school boys and girls. These dances were an extension of her classes and held for high school age students in the area.

She had very strict rules for the young ladies who wanted to participate. Gowns had to be of a certain type, and nothing too bare or plunging was permitted. This starchy New England matron who ran the dances was also particular about our weight. My dear mother put me on a diet that summer so I would conform to the ideal held out for those who wished to attend. “I don’t want any wallflowers at my dances,” she was known to say.

The dress I was looking in the consignment store at was a strapless, full length gown. The skirt was fairly narrow. I smiled to myself, remembering the hoop skirt that went under one of my first full skirted formals. How difficult it was to sit down without the darn thing flying up in the air, taking my skirt with it, revealing my gartered stockings to the world. There were other uncomfortable petticoats, starched and stiff that came later. My mother would laugh and say sometimes one must suffer for beauty. Although she wore a girdle for years and tried to get me to wear one, I refused to.

Along with hoop skirts and starched petticoats, no one born today or even many born a while ago know what a test pattern is, nor has seen one. When my parents got our first TV, there were no programs before around 4 o’clock in the afternoon and after around midnight at night.  All that was on the screen otherwise was a black and white test pattern from the different TV stations.

There were no color TVs. Nor was there color programming! Movies were shown on Sunday afternoons and I remember before we got our TV, the joy of watching them at a friend’s home. In those days a comic book was ten cents, and I wasn’t permitted to buy one but I could read hers. Having lived a long life, I can recall much that no longer exists except in the museum of memory. It’s fun to visit there occasionally, though I’d never want to live there all the time.

The Gift of Christmas Giving

Laura Dodge's Christmas windowOne of my fond Christmas memories is of my dad sitting by our living room fireplace wrapping and addressing his Christmas gifts to his workers and others with whom he had a working relationship. He was a horticulturalist and his company was on the North Shore where there were many fine estates and special gardens. He was good at designing views and helping the owners of the estates and their caretakers maintain their trees and shrubs.

His gifts ranged from cartons of cigarettes to bottles of whiskey and included neckties and other smaller items of clothing. Some were for the gardeners of the estates, some for those who worked under his supervision. His men and their foreman got the more expensive gifts. Each one was carefully wrapped and labeled. When I grew old enough to help him I delighted in doing so. All things having to do with Christmas have always been special to me.

Many years ago, on the advice of a spiritual teacher, I began cultivating an attitude of gratitude. This practice has since become much more popular, featured in books and by Oprah, on Facebook groups and on a variety of other sites. There is even a lovely, inspiring site devoted to the expression of gratitude called Gratitude.org. It features all sorts of good news together with thoughtful comments and teachings, as well as poetry.

As Stephen and I drove home after delivering the last plate of Christmas gift cookies, I thought how grateful I was to have an opportunity to acknowledge as my dad did, the kindness of those who had been of help. My token plates of cookies seem a small return for all that these people have done for us, yet they are at least a tangible offering on the alter of my gratitude.

Also, since I was a small child I have been the recipient of much for which I am grateful now, even though at the time I was not aware of the benefit. When I have the opportunity to do so, I acknowledge in my heart those who have been kind to me in the past as well as in the present. Some of them have passed out of my life and some have simply passed away. I remember them with gratitude and say a prayer for their happiness wherever they may be.

Thanksgiving is a fine time to be aware of that for which we are grateful, yet Christmas is my opportunity to express that gratitude in a tangible way to those whose generosity I hope to acknowledge. My life would not be what it is without the help I have received along the ways Those who have in the past, those in the present and even those in the future deserve my thanks as well as whatever I can do to pay it forward in gratitude for those who are too far for me to bring them cookies.

 

What will you Harvest from this Year

I remember my mother cutting up fruits and vegetables and filling her large canning kettle with jars. The kettle steamed away, filling the kitchen with warmth and making my mother perspire. The jars were later stored against the cold winter months on shelves in a kind of rough closet in our cellar. There was also a small barrel of potatoes there and one of my tasks was to go down occasionally and pick off their sprouts.

Too, my mother made wonderful jellies from the fruit that grew on my great aunt Alice’s trees. A lawyer, my great grandfather was also an amateur student of horticulture. He planted all sorts of fruit trees as well as grape vines, vegetables and flowers all of which were tended to by a gardener. He would bring fruit to my mother that she processed to make the clear jellies we ate with our Sunday meals.

I think of my mom and her tasks at this time of year when fruits and vegetables reach their peak and are harvested. Long ago Pilgrims and Native peoples dried food to preserve it. Later on many housewives filled glass jars, heating them until the food within could be kept for use in the winter. Today the same people who might in the past have canned and preserved it will freeze the extra produce that they cannot use right away. People with gardens are putting food by in order to have healthy, homegrown meals for the winter months. We who live where the seasons prevail have always done this.

These days to be sure food of all kinds is plentiful in every season year round, and if we do not have a garden from which to harvest, we are less likely to preserve the fall harvest against the winter. However, there is more than one kind of harvest to be made at this time. If we have planted ideas in the spring, and tended them during the summer, they may have matured enough by the fall to be gathered in and made use of during the rest of the year. If we have projects we have worked on, ideas we have been developing, stories or poetry we have been evolving; now is the time to get them out there for the final testing, checking or editing.

We no longer live in an agrarian society, and yet the seasons are still a part of us. Their energy need not be confined to the actual planting, tending and gathering of food. For while we may not plant actual seeds to grow, tend, harvest and preserve, we can use the energy of the seasons to generate what we need to nourish our own lives and the lives of others. The seeds of our efforts whether edible, useful, or otherwise productive can be sown in the spring for our eventual harvest and use in the fall. Then during the winter months they can supply what we need to sustain us and keep us from the cold.

Easter Time Remembrances

Rabbit in Cabbage 2While I am quite fond of them now, as a child I disliked eggs intensely. I vividly remember sitting in front of an eggcup containing a boiled egg and staring at the hateful thing as it grew cold. The rule was that I couldn’t get up from the table until I had finished whatever meal I was supposed to be eating. Sadly, I hated to sit still and perhaps would have been termed hyperactive if such a term had existed then. However, sooner or later I suppose I must have swallowed the contents of the eggcup and been released from my chair. The eating of it is not recorded in my memory.

While I certainly have some happy Easter memories I also have one that is not so. However, it is still vivid in my mind even after the many years filled with all the things I surely have forgotten. This was during World War II. My parents kept chickens, both for eggs and for food. We had quite a large flock of hens, and as I recall a rooster or two. There were times when they laid many more eggs than we needed. As anyone who has kept them will know, chickens lay in cycles, sometimes more sometimes less. When we had overage, my parents would sell the eggs to friends and occasionally to acquaintances.

This particular Easter I might have been eight or ten. My parents had too many eggs and decided to have an Easter egg hunt. All of their friends and most of their acquaintances had children so there were plenty of guests anticipated. The adults would have cocktails while the children hunted for eggs, and the person who found the most got a prize. While they hid them, I was told to stay in my room so I would not see where they were. Later they decided I ought not to participate because it was up to the guests to find them.

Fast forward to a happy memory: When my oldest daughters were grown enough to know about the Easter bunny they decided there ought to be one for the parents. Their father and I hid candy eggs for them and their younger siblings in various places in the house. Each year they in turn spent their own money for candy eggs for us and hid them in the kitchen, having told us it was off limits to hide eggs. Their delight as we hunted was a great joy, and what fun we had uncovering the Parent Easter bunny’s gifts.

Holidays often trigger memories of times gone by. These can be a treasure to hold and caress, most especially if they concern any who have passed on from this life. If there is sadness for us in them, perhaps it can be tempered by the happiness of our recollections. The most precious memories are those that remain for us to recount and perhaps to share with those who come after us. I once recorded my father on tape telling me about the chickens he had as a boy. There were only a few and they didn’t last long. Perhaps they were the inspiration for the ones he had as an adult that laid the eggs I so disliked yet remember so well.

Spring Is Making Its Way

Blue flowers and stone wallWhen spring comes, like the creatures in the woods and fields, I feel as though I am beginning to wake up after a time of hibernation. I want to get out doors and spend more time in the light. I welcome the brightness that comes in through the windows even though it also shows the accumulation of dust that is so easy to miss in the dimmer light of winter. I get out of bed more eagerly, most likely because the sky is brighter when I do. Spring also brings me memories of what it was like for me when I was a child and the seasons were more defined by what we ate as well as what we did.

Growing up I spent much of my time out of doors. My mother believed the fresh air was good for me. As well she wanted me to be active rather than sit with my nose in a book. Whenever the weather was relatively decent, neither raining, snowing nor windy and cold, I was sent out doors to play. I grew up in the country on a property that belonged to my great aunt Alice, with a good bit of land to it. Thus I could wander to my heart’s content in the fields and marshes that surrounded her large house and our cottage.

When the spring came and the ice receded from the marsh, I would trek about looking for interesting objects that the sea might have delivered during a winter storm. Once I discovered a large log, perhaps three feet or more in diameter that formed an interesting place to play. Another time I found a pane of glass with a lovely blue design on it that was yellow on the underneath. Thinking back I can see it still. It was probably once part of a picture frame. Sadly one day it disappeared, as did the log I liked so much.

Spring also meant there was more daylight time after school to play out of doors. As I wandered around, I made up all sorts of stories in which I imagined myself having some kind of an adventurous part. Although I had no one to play with I was good company for myself, and my active imagination helped me to create all sorts of fun. I was alone but never lonely. Being on our own property I was completely safe as well. It seemed to me that I had a little kingdom all my own to enjoy. Spring brought new opportunities for adventures as well as the chance to be by myself with no one to tell me what to do.

My brother lives in the house we grew up in and whenever I visit with him I marvel at how much smaller the property seems to me now. Too, the days seem far shorter than they did when I was a child, when Saturdays especially seemed to hold endless hours in which to enjoy myself. I greeted the advent of spring with joy because it meant I could get out and explore the surrounding fields and marsh in search not only of adventure but also of signs of the new growth that spring would bring to share with me.

Lilac Time by Tasha Halpert

Thinking about lilacs I remembered hearing a song with the words “Lilac Time” featured prominently in it. Looking it up on the Internet I found the full title Jeannine, I dream of Lilac Time, as well as an old recording of it to listen to. It brought back memories of my hearing it as a young child. What fun it was to listen again, courtesy of the Internet and whoever was kind enough to resurrect it. Seeing lilac,s like hearing the song, brings back a host of memories.

Stephen and I were driving to an appointment when I saw a lot of lilacs by the side of the road. They were so lovely I had to stop the car to look. What was even more wonderful was the fact that there were a several different varieties of lilacs in this particular collection. What I really wanted to do was get out of the car and pick some. However, I resisted the temptation and drove on before their lure grew too strong for my will power.

I have many memories involving lilacs that go back to my childhood. There was a cluster of bushes in the back yard of the home where I grew up. There was a lattice fence in the midst of them. This helped to form an enclosed space on one side where I played house. There I made mud pies using water I would scrounge from the house and berries from bushes nearby. I also mixed up other concoctions to feed my doll family.

I kept my doll sized dishes, pots and pans and other implements on shelves made from boards stuck into the branches of the lilac bushes. These usually collapsed when it was windy. For some reason that escapes me now I didn’t mind too much; I’d just pick them up and rearrange things as best I could. I even wrote recipe booklets of my efforts, though the pages became illegible when they got soaked in rain.

There were a great many different kinds of lilac bushes next door, growing at the end of my great aunt Alice’s back yard. Her father had been a horticulturalist and most likely chose the various different varieties so that they would bloom for longer as well as present different colors in display. Some were double, some had an incredibly sweet smell. All of them were lovely. I used to pick them and bring them home for my mother to put into vases.

Each year I worried that there wouldn’t be any lilacs still blooming to honor veterans on Memorial Day. My family always went to the parade in Beverly Farms where there was a square dedicated to my father’s father who died in World War One. The children who marched at the end of it used to carry lilacs to throw in the water when the parade ended at West Beach as the band played “For those who perished on the sea. Seeing the lilacs as they bloom now I greet them with joy and with gratitude for their beauty both today and in my memory.
