A Cake for All Occasions

Grandmothers 3, cakeMy mother wasn’t one for desserts and she didn’t like to bake, so if there was something to be made in the oven, she occasionally enlisted my help. I was also allowed in the kitchen of a friend who visited her grandmother in the summer. Her grandmother had a cook who was kind enough to let us mess up her tidy domain, so my friend and I spent happy hours making brownies.

In those days my repertoire was limited; however, I was always happy to be allowed to bake. I still enjoy it, though these days my time is more often devoted to writing than to baking–and there are always the calories to be considered. Lately it’s been too hot to do so, but I needed a cake for Stephen’s birthday, so I went looking for my special recipe: Vinegar Cake.

While it is counterproductive to start the oven in the midst of the summer heat, this cake won’t take long. Quickly put together, it is easily made into whatever kind of a dessert you wish to serve. When I made it was for Stephen’s family birthday party, there were only a few of us to enjoy it. It is such a simple recipe that if you are pressed for time, as long as there is enough time for it to cool, it can be made shortly before you need it. Being without eggs, it is good for vegans. Do not be put off by the title.

Preheat oven to 350, grease an 8X8 square baking pan. This cake is fairly thin, and is nice and chocolaty. It really needs no frosting, but I include a recipe in case.

1 1/2 cups all-purpose flour—gluten free baking replacement, or wheat based

1 cup sugar

1 tsp baking soda

1/2 tsp salt

3 Tbs cocoa powder (I added another) plus more for dusting top

1 Tbs vinegar

1 Tbs Vanilla Extract

1 cup warm water

6 Tbs Vegetable oil

Mix dry ingredients in a medium bowl, mingle wet ingredients. Make a well in the dry ingredients and add all of liquid ingredients. Mix well. If batter isn’t liquid enough, add water a tablespoon at a time until you get a thin batter. This cake is very moist. Bake in greased 8X8 pan in 350 preheated oven for 25 to 30 minutes or until a wooden pick in the center comes out clean and edges have pulled away slightly from the pan–this could take up to 35 minutes. Or bake in cupcake cups, a little less. Dust to your satisfaction with cocoa powder. I used a sieve and stirred the cocoa powder in it to make it come out evenly.  Serves 16 cut in squares, or makes 12 cupcakes.

If you are using a gluten free flour or don’t want lumps it might be good to sift the ingredients together. It makes a better texture for the cake. For a simple frosting, mix 1 cup confectioners’ sugar with 2 Tbs soft butter and add 1 tsp vanilla and some milk or cream until spreadable. You can cut it in half and make a layer cake to serve 6 or 8.

 

The Blame Game

Roots and light When I was growing up it was my responsibility to care for the chickens. In the winter what that meant was carrying a heavy bucket of water from our house the thirty or more yards to their coop. The spring I was twelve the wetlands near the coop flooded and there was plenty of water right there. I took advantage of it. However, something then happened to the chickens. They began dying. Apparently, they had somehow caught a disease.

My parents called me into the living room. They were sitting on the sofa looking stern. They asked me if I had been doing anything different for the chickens. “No,” I lied. Then they faced me with the evidence. My great aunt’s gardener had seen me getting the water from the swamp. Uh oh! I don’t remember my punishment—probably a suspension of my allowance. Sadly, I didn’t really learn my lesson then, though eventually I did. I was often too fearful of the consequences to tell the truth.

Many if not most of us are. The vase is broken, the favorite toy ruined, the car dented and we hear: “He/she made me…”  or “I couldn’t help it.” Heard that before? This familiar copout is often every child’s first response—except perhaps for, “I didn’t do it.” How do we teach children to take responsibility for their actions? It isn’t easy and every parent has his or her idea how best to accomplish this. Sometimes they manage to make that happen, and the child grows up to be a responsible adult.

However all too often even as adults we are reluctant to take the responsibility we need to for our own actions. We may be afraid of the results when someone finds out. I know often I was, or we may not want someone to think ill of us, as in “how could I be so stupid as to make that mistake?”  There are as many reasons as there are situations. The bottom line is that we do not like to admit to being ill advised, ignorant, or just plain absent of mind.

Blaming is something many do when they want to get out of a situation where they feel trapped or one that will lower their value in another’s eyes and mind. The problem with playing the blame game is that not only is it dishonest, it is also unkind to the person or persons we may be blaming for our mistake.

I learned to own up to my responsibility only as an adult. My husband Stephen was actually the one to help me to do this. He would not allow me to get away with evading it, and he would make sure I was ultimately honest. I’ve learned that honesty really is the best policy when it comes to admitting to wrongdoing. Feelings of guilt are thereby avoided as well as other consequences that may arise when and if the truth emerges—and all too often it will.

 

Competition Versus Cooperation

chickens.jpgI’ve never been a competitive person. Usually a sense of competition kicks in around the age of four, when a child gains a clear understanding of “me” and “mine.” Even then there is often a desire to share unless the child is surrounded by competitors. When I was growing up competition was the rule and the idea of a game that required cooperation instead was unknown. I did not enjoy the competitive world I grew up in.

Even as a child I disliked competition in sports. One reason was that I wasn’t very agile or well-coordinated and thus most often chosen last for any team. Another was that it made me sad that someone had to lose in order for someone to win. I played board games yet not with a keen desire to win. For instance, Parcheesi which was a popular game when I was young was best won by blocking opponents and rendering them helpless. I never enjoyed doing that. For me, that was like punishing someone or hurting them.

My mother was a fierce competitor. She loved games and was good at them. She played Bridge and Mahjong with her friends. With me she played card games and Chinese checkers, which she played without mercy, making no allowances for youth or inexperience. She played to win, regardless. As a result, I did learn to play a good game of Chinese checkers. Fast forward to my adulthood. I still resisted competition when I could. Unfortunately, my children invariably made me enter the tired Mothers Race at the fourth of July games. in the town where they grew up. I came in last no matter how hard I tried.

My children’s father was very competitive. He encouraged the children while they were still quite young to play on teams and to compete. He even started a girls’ softball league in the town where we lived.  My daughters and then my sons all strove to do well in order to make him happy. He cherished their ribbons and trophies and often coached their various teams to victory. As a loyal mom I used to attend their tennis matches and their and baseball and ice hockey games, cheering along with the other parents and trembling for fear they would lose and be sad.

Regardless whether or not they won, I was glad whenever the games or matches were over. Certainly, my children learned much from their years playing tennis, hockey, and baseball. They had fun and met other children they would not have met otherwise. I am not regretful for them, though I do feel there are other ways to have fun that they might have enjoyed as well. I was too busy keeping up with household and child caring duties to do much about that.

Competition is said to be a good learning experience for children. Today even little ones barely out of toddler years are put on teams to play at various sports. For competitive people that’s good. For those like me, not so much. On the other hand, it is possible to play games in the spirit of cooperation. Team efforts in sports are only one way. There is also a cooperative way to play many games, and that is to play to see how high the score can rise. Scrabble can be played that way, and I know that’s how I would prefer to play it.

Honoring my Father on Father’s Day

Even though she didn’t like to cook, my mother would not allow my father to do so. She said he burnt everything. She had a strong fear of wasting food. Later I think he occasionally tended a barbecue, however they were not in vogue when I was little. I have early memories of him polishing the family silver. My mother didn’t do that and didn’t wish to even display it. We had many different pieces. They were family heirlooms, inherited from elders who had passed on. I remember a huge tea set with lots of shiny parts to it that rested on a big silver tray on a large wooden sideboard. My father loved and cherished it.

As it is wisely said, no one is perfect because God isn’t finished with us yet. Perfection may be something to strive for, and attaining it is most likely impossible. People are people and bound to mess up. Fathers can’t be perfect either. Some are cruel, whether consciously or unconsciously. I knew someone once who said that her father used to tell her and her brother to jump of the kitchen table and he’d catch them, only he wouldn’t. He told them he wanted to teach them not to trust what anyone said.

Doubtless he meant well. Perhaps he had suffered from believing, himself. My father would taunt me and my siblings when we made mistakes. He wanted us to toughen up, learn not to care what people thought. Did he succeed? I believe he did, however it took a while to sink in. Meanwhile, I resented his pointing finger and his “ha ha” followed by some negative comment. That was not all; we had a lot of fun together too, and he could be very kind. I once came home to the apartment my young husband and I shared to find him sweeping the rug. I didn’t have a vacuum and hadn’t realized I could sweep it with a broom. He used to give me lovely valentines.

He bought me my first washing machine—it was state of the art for the time, with a rubber tub that squeezed the water out of the clothes. He taught me how to dance, and he was a good dancer. He gave me money for years, an allowance that helped greatly when I was first married. Later on he paid for my health insurance because he wanted to take care of me. No, he wasn’t perfect, and I didn’t care. I loved him faults and all. He lived large and had wonderful charm. He had a lovely smile and he smiled often.

I miss him. Yet I miss most the father of my childhood and youth, when he was strong , energetic and good looking. He was a snappy dresser and loved loud ties and colorful clothing.  Bad habits and ill health took their toll. His later years were not happy and he declined mentally. It was difficult to see him so diminished. Yet once in a while the old smile radiated from his face and sometimes he told a joke or said something cute and funny that recalled the man he had been when I was little, and we used to build sand castles and jump the waves together.

Mothers are Everywhere and Always

Family women 1989My mother did not have good training for the task of mothering. Her mother was the wife of a diplomat and spent her days doing what she needed to do to support my mother’s father in his position. Her children were cared for by nursemaids and tutors. I knew her briefly: a proper, formal woman who came to live briefly in the states in the late forties. I was a young teen at the time, not very interested in this elderly person. Now of course I wish I had asked her more about her life. She returned to Germany and passed on soon after. Ill prepared as she was, my mother did the best she could, and I honor her for it.

When I think of the word mother, I envision a womanly figure with her arms around a child, though not necessarily her child.  Many women without children do their share of mothering. One definition of mothering is taking care of or caring for someone. The nature of the caring embraces many actions. A mother cat keeps her kittens close, yet disciplines them as well. A human mother hugs her child and also disciplines that child—hopefully in a loving manner. Mothers of all kinds help children learn limits and learn to respect them.

Growing up, I was fortunate in being given a great deal of unlimited physical freedom. Nobody minded when I climbed trees or played explorer in the marshes behind our home. As long as I stayed on the property I could do as I liked. The few times I ventured off I was punished. However, my punishments were not cruel, only restrictive: being confined to my room for a long period. I’m sure my mother kept an ear out for me while I played, in case I needed her. She was at home with me and my siblings. Today’s mothers are fortunate if they can do that. In some respects not being able to makes mothering harder now.

I went on to have children of my own; all of my girls are now mothers themselves. Sometimes they need me to mother them; sometimes they even mother me. Mothering does not end when the child is an adult. However as many a mother must discover, mothering must be modified if one does not wish to annoy one’s children. There is a fine line between caring for someone you love and overdoing it: smothering versus mothering. Kindness is defined by how it affects the recipient; helicopter parenting, as it is called can have negative results of all kinds. Limits are for parents as well as for children.

Teachers mother students; some animals have been known to mother young ones not of their kind; I was comforted by the trees I spent hours sitting in– reading, and writing poems. Mothering is of the heart–the heart of the receiver as well as the giver. A difficult childhood results when the mother is unhappy or ill prepared for motherhood. It is easier to judge one’s childhood experience as an adult. Also, not only women can mother. Men can as well. I see them, infants on their backs or in a stroller, tending little ones in a loving manner. On this Mothers’ Day In my heart I honor all those who have mothered me, and I am grateful to each and every one.

The Eyes of Perception

Corner Reflections medBecause I was very different in my interests as well as my life circumstances from that of many of my classmates I was badly bullied in grade school. However what was worse was that I had no good way to respond to my classmates’ unkind behavior. It wasn’t until I discovered meditation that I acquired a way of controlling not only my reactions and responses but also of avoiding the potential complications of thoughtlessly spontaneous and perhaps provocative words and actions.

As I grew in my ability to see what was in my mind and/or heart before I made things worse for myself, I also discovered ways to make my life much happier and less complicated by negative thoughts and emotions. Some believe that meditation is a form or religion or at least connected with it. However it is actually a form of exercise for the mind. As physical exercise preserves the body, so meditation practice helps to preserve the mind.

Is my glass half full or half empty? Believe it or not, that depends on the nature of the thoughts I have concerning both the glass and what is in it. Am I looking with feelings or thoughts of fear of emptiness? Am I anticipating or being grateful for what is in the (metaphorical) glass? My days go better when I am aware of what is going on within me.

Since nearly fifty years ago when I began practicing meditation, I have become able to be much more aware of my thoughts and feelings. It is a great help to my ability to remain calm and aware during difficult circumstances. I’m still working to remain conscious of my inner processes, and I expect to do so for the rest of my life. Working on the mind is like doing scales on the piano. A good musician must keep on practicing.

When I find myself dreading an activity or event, I can remind myself that fear is False Evidence Appearing Real. My “glass of hope” will then appear to me to be half full rather than half empty. When I feel a sense of joy as well as of gratitude concerning whatever might be approaching, I will have a “glass half full” of optimistic feelings. This approach has the effect of helping me to get the best from whatever does happen, even if that differs from my expectations. The same is true concerning what someone might be saying to me: I can better monitor my responses and reactions.

When I am mindful—aware of what is going on in my mind and heart, I have more control over what I do or say next. If I am able to anticipate my words or my inner reactions to what is happening or to what someone is saying, I am better able to control them. Thus I can to avoid potential mistakes as well as difficulties. In addition, when I am able to take advantage of my perceptions, I may ward off the far larger problems that might otherwise evolve were I not able to see clearly or to be prepared with positive words or actions.

 

 

 

 

 

The Importance of Cherishing Myself

Tasha full f aceOn the rare occasions when I have been without anyone to cook for except myself I found that I had very little interest in making my own meals. While I truly love to cook for my friends and my family, in my experience, it brings me been little to no pleasure to cook just for me. Lately, I haven’t had to deal with that problem, and while I hope I won’t have to in the future, if I do, I will try to think differently. This attitude may be why most if not all of the retirement and assisted living communities have food plans included in their fees, as well as dining rooms that serve up to three meals a day.

For most of us cherishing ourselves is not easy. It’s not something that comes naturally, and there’s a reason for that. While because they don’t know much about being an individual, very young children are naturally unselfish, once they learn to think of themselves as “me” most of their parents begin teaching them to share. “Sharing is caring” becomes a kind of guidance with which to approach both giving and doing. This is all very well until we begin to leave ourselves out of the sharing equation. It is vital to remember ourselves when we share. I am happier and more content when I include myself in my decisions and actions concerning others.

What can make us forget to do that is that often it feels better to give than to receive. Giving can even make us feel a bit superior to the recipient, a kind of pat on the head. It can also incline us to wish to be thanked or even to be given back to in some way. If or when we do not get a return on our gift, we may grow resentful. This then can create a feeling of martyrdom or even bitterness as in: “I did thus and such for them and got nothing back,” or “Look what I gave them and what did they give me?!”

If we cherish others at our own expense and forget to cherish ourselves, we do both the recipient and ourselves a disservice. It is not difficult to think of ways to cherish ourselves. However given that it may feel more virtuous to focus on others, it may also be easier to do so. Yet small acts on our own behalf can make a big difference. For instance: remembering to buy and prepare a kind of tea I like along with the one that Stephen prefers starts my morning happily. Remembering to ask him to join me in doing tasks or walking enhances my day.

My own small acts of kindness to myself, like taking the time to sit with my feet up and read a fun book for at least an hour a day, or occasionally stopping what I am doing and going out on the porch for a breath of fresh air make me feel good. I also appreciate it when I remember to do a bit of stretching or some exercise. When I discover a new pair of socks at my favorite online provider, or a pretty but unnecessary item of clothing in our local thrift store, I no longer feel guilty giving this to myself. Sharing means giving equally, not depriving oneself. If I encounter any guilt when I do something for me, I remind myself that I deserve to be cherished, and I smile and tell myself, “I love you too.”

Flowers of Remembrance

In the town where my grandfather who fought and died in WWI lived, there is a square dedicated to his name. When I was a child my father took me every year to the Memorial Day parade there. It would stop at his sign and someone would place a wreath on it. Then we would add a big bouquet of carnations. Someone from our family would bring them, and I can remember being held up to put the flowers in. This is the 100th anniversary of its original dedication, and my brother will be there to do the family honors.

I remember as a child wearing my big straw hat with the ribbon hat hung down the back, watching the band march by with the big drum that boomed so, and the brasses playing a marching tune. Later I brought my own children for the event. One daughter would cover her ears, the booming and shrieking of the drums and brass being too much for her. After the square was decorated, we would walk with the parade down to the beach where flowers were thrown into the water and the band would play “For those in peril on the sea.”

Memorial day was originally established with flowers. At the end of the Civil War the women who were placing flowers on the graves of those fallen at the battle of Shiloh wished not to distinguish between Union and Confederate. The thought was to honor those who died, regardless of their affiliation. In the years since, many traditions have grown up around Memorial Day in the US, with flowers and wreaths remaining the most notable symbols of remembrance.

Once as I was out walking in a neighborhood with many Christmas wreaths decorating the doors, a man came up to me and in a British accent, asked me about them. “In England we put a wreath on the door when people have died,” he said. I chuckled and said no, no one had died here; these were Christmas wreaths. I told him it was customary to lay wreaths on graves in the US however, first displaying them at the funeral itself.

A search on the Internet will reveal much information concerning wreaths and their uses, as well as flowers. Once when I was in charge of purchasing and arranging the flowers to decorate my daughter’s wedding celebration, I bought a variety of blossoms, chrysanthemums among them. My daughter’s husband was Italian and announced that chrysanthemums were only for funerals. I removed them and my bouquets were significantly diminished.

In Italy laurel wreaths are given to graduates of advanced degrees; they are a sign of victory. This goes back to the early Greeks and Romans who used them that way. All over the world flowers too are often given to the graduates, and as well to actors and performers of all kinds at the conclusion of a performance. While they are ephemeral and fade quickly, the flowers we use to honor both the fallen and the victorious are a precious reminder of how important it is to take note of our achievements great or small.

Riding a Time Machine into the Past

Reflections in SummerWhat fun it would be to hop onto a time machine and return to the Christmas shopping of my childhood, after I had turned eight. How I enjoyed buying my parents small stocking presents at Grants and Woolworth’s. I want to return to the days when the ten dollars I had saved up sufficed to purchase about everything I wanted to buy for them. Maybe there would even be enough left over for an ice cream cone. I loved the way the store smelled when I walked in, and the overflowing counters with the glass part in front to make sure items didn’t fall off.

I didn’t mind no longer believing that Santa filled the stockings, because it was such fun to wrap up my inexpensive gifts to fill them for my parents. Best of all would be to write notes on them the way they did. I bought Ponds cold cream and vanishing cream each year. I think they were ten or twenty cents each.

My mother told us a joke once about the latter. It seems a child took off all her clothes, rubbed her whole body with vanishing cream, and then went downstairs where her parents were hosing a party. The polite guests pretended not to see her. The next morning she told her mother gleefully that vanishing cream really worked. My twelve year old self thought that was very funny.

My time machine would whisk me back to my Great Aunt’s dining room with all the relatives gathered together and finger bowls brought in at the end of the Christmas meal–often roast beef with Yorkshire pudding. Sometimes there would be a plum pudding brought in and ignited after brandy was poured over it. The dancing flames were blue and very exciting. I didn’t care much for the plum pudding but the had sauce with it was pretty good.

It would take me down the snowy streets with the sparkling stars way up high, and the carols on the radio. Those times seem quite simple compared to now. The television had only a few channels, and the programs didn’t play all night but ended with a test pattern. Mothers mostly were at home. Most had only one car per family, and my mother’s friends met bi monthly for lunch and chitchat over their mending.

In my time machine I would also visit the wondrous Daniel Lowe’s department store in Salem with all the glittering silver and crystal when you walked in. I did no Christmas shopping there. Salem was the big city to me and we seldom went. Nearby Beverly was smaller. That was where the Woolworth’s and the Grant’s were, as well as Almay’s department store. We did some of our shopping there. In those less frantic times no one thought to purchase gifts until a few weeks before Christmas. The stores waited until after Thanksgiving to decorate for the holidays or play Christmas music. However, that was then. Though different from that time, now has its delights as well. While the past is fine to visit, I wouldn’t wish to live there.

More Than One Mother

In my life I have been fortunate to have some remarkable women friends who in certain ways could be considered in the light of mothers. Their age had little to do with it. It was their warmth, their acceptance, their caring and their love that helped to create the part they played in my life. I loved my late mother dearly, however there were aspects of her nature that were difficult for me to deal with, and while she was well meaning and did her best to be a good mother, she could not be everything I would have wished her to be. In my adult life the physical distances between us through the years also created a problem.

The depth of her compassion and acceptance were a special feature of one of the women who served my needs in a way my mother could not. We shared many of the same interests and in a climate where I had little support, she was very encouraging to me in my efforts to learn and to grow. She would frequently invite me to lunch and we would spend many hours in conversation about a variety of subjects. She had a wide range of knowledge and very little prejudice. She was also warm in a way my mother was not.

My own mother was a very good artist and once her family was grown devoted her life to her art. She had her own gallery and her paintings were admired and purchased by people from all over the globe. However, she and I had very little in common in our interests. Our telephone conversations were usually about what she had been doing or what my children were up to.

Another of my mother figures was also an important teacher in my life. Married at eighteen I had no work experience. As a result of studying with this person I gained a way to earn a living as well as a way to be of help to others. She took a personal interest in me and allowed me to assist her in many ways. I found in her a lifelong person to admire and look up to even after she moved away. She was a wonderful teacher and a good friend. My mother, who tried in vain to teach me to knit often said she was too impatient to teach me anything. However I am still thankful she was kind enough to pay a neighbor to give me sewing lessons.

These are only two of the special women who were also maternal figures in my life. It takes nothing from my original mother to think of them in this way because they filled roles that she could not. No single individual can be all things to another whether as a parent, sibling or spouse. Yet we all may play roles in one another’s lives to be of help and to fill in the gaps that our actual mothers might not have been equipped to do. I am always extremely grateful to my mother who worked so hard to raise and in her own way mother me. I am also very thankful to those others who gave of themselves to me with love and acceptance in their hearts.
