The Many Ways to Happiness

Grafton sky 2When I was a child one of my favorite occupations was to rearrange my mother’s pantry shelves. I delighted in doing this. It seems to me that I was born with a need to accomplish. In many ways, this has been a source of my happiness and a way of making myself feel good. I can remember when I was a young mother that time spent in the kitchen helped to heal any disappointment or dismay. Baking cookies for my children did wonders for my spirits and helped keep me cheerful. Even simple tasks like the ironing I did then were useful to me in lifting my spirits.

I learned long ago that whenever my spirits need lifting I have a choice. Beyond dwelling on whatever it is that may be bothering me, I can seek happiness or I can stop and look around me for something to be grateful for or to enjoy. When I do I have taken a significant step toward being kind to myself as well as making myself feel better. But there is more: I can keep reminding myself to take note of the many things to appreciate that surround me. My happiness is made up of small smiles harvested daily.

While the link between accomplishment and happiness is still strong within me, this other link is even stronger: the opportunities to notice what makes me happy. It functions for me whenever I notice whatever is beautiful around me; it is delivered in the joy I receive when I walk with Stephen in the mornings and listen to the birds twittering and chirping around us. When I get a phone call or an email from a friend I haven’t seen or heard from for a while, my heart fills and I smile. I feel happy when I read the morning newspaper and find interesting stories from it to share with my husband.

It is truly said that happiness does not work as a goal. If for instance I buy something I have wanted, it may make me happy for a little while yet that kind of happiness does not last. Not unlike taking a drink of alcohol or indulging in sweets, the good feelings gained this way dwindle soon. This diminishment is one of the stimuli for addictive behavior. Once the good feeling is gone it is normal to wish for more in order to regain or prolong it. This experience leads many people to practice self-destructive behaviors.

However, the happiness that comes from the appreciation of what is given is not addictive nor can it be sought. It comes from the practice of awareness, of noticing some small joy or gladness that comes to us as a kind of gift. It also helps to have an understanding of what makes us feel happy so that we can take extra care to notice it when it is given to us. I must open my eyes and ears to notice the beauty around me in order to appreciate it. I need to remember to look out the window to see the lovely sunset when it glows there. This kind of happiness lasts beyond the experience and nourishes me always.

Celebrating Special Days with Special Treats

Cake imageThe joyful birthday of our country on July fourth happens to be right next to and between my husband Stephen’ birthday on the third and our wedding anniversary on the fifth. Over the many years of our life together what a wonderful time we have had with our celebrations. In the past we would share what we used to call our three days of peace and love with friends. They would come from everywhere and stay for the three days, overflowing our large home and even camping in the back yard. The pool and the hot tub were frequently in use. They were joyous occasions.

Today we live more quietly, yet we still celebrate and have friends in to join us, though not so many or for so long. Special recipes are always fun to share for these occasions. One of Stephen’s favorites is a cake made with Almond paste or Marzipan. The main ingredient can be purchased at almost any market. This cake is not the kind to be frosted however you could also decorate it with fruit. In my case if I decide to make it this year I might spell out Happy Birthday Stephen with pieces of strawberry.

Marzipan Cake for Special Occasions

Preheat oven to 325

Grease and flour, or grease and line with parchment an 8″ round cake pan.

Ingredients:

7 or 8 oz almond paste or marzipan

¾ cups butter

2/3 cups sugar

3 large eggs, beaten

¼ teaspoon almond extract

¼ tsp baking powder

1/3 cup all purpose flour

Method: Crumble almond paste into bowl. Add butter. Beat well until blended. Gradually add sugar and beat well until mixture is light in color and texture. Add beaten eggs, continue beating for 3 minutes. Add flavoring. Sprinkle in baking powder by pinches. Fold in flower. Scrape batter into prepared baking pan. Bake 35 to 40 minutes, until firm and browned on top, and a toothpick comes out clean. Let cool 10 minutes on a rack. Slide a thin knife around and under the cake to detach from pan. Invert on rack then turn right side up and finish cooling. Sprinkle with powdered sugar if desired.

This cake is a wonderful treat, and can easily be made gluten free by using a flour mix from Bob’s Red Mill or another one you might like. It really helps to have a mixer, as it would be very labor intensive to mix it by hand, though it would also be excellent exercise. Whether I make this recipe or another I am fond of, I know I will enjoy celebrating these special days.

A Rare Day In June

As I drove around doing errands my eyes kept being drawn to the beautiful blossoming trees and bushes on the local lawns and roadsides. The town I live in is truly filled with beautifully kept homes and gardens. People here take pride in the appearance of their homes and everywhere you drive in Grafton there is beauty to be seen. As I drove I thought how eloquently the green grass, the freshness of the leaves, and the tidy gardens spoke of the loveliness of the beginning of summer. It is nearly time for the solstice. June 21 will bring the onset of the long hot bright days of June, July and part of August.

When I was a child I could hardly wait for these wonderful summer days: free time, swimming, sitting in my favorite tree reading, all these activities and more awaited me. As a young adult with my children in tow, on any sunny day I headed for the beach, meeting friends and chatting over iced tea as we watched over our little ones. However, as an elder, I confess that I cringe at the prospect of these long, hot days. The heat of the summer hours robs me of my ability to think and makes it harder for me to sleep at night. I have to lurk indoors with the air conditioner going, hurrying out of the house for an exercise walk either first thing in the morning or later on toward sunset.

Too, the sun is not as benign as it used to be. The thinning of the atmosphere due to global warming has increased the potency of the sun’s rays, necessitating cover-ups and hats, not to mention sunscreen and sun glasses. Remember rushing out to get a tan at the beginning of summer? The “healthy tan” we all used to crave is less desirable now. It’s almost as though we need to go back to Victorian times when pale skin was a sign of beauty. Now it could be a sign of care for one’s health. I remember when I was in college skipping a class I disliked to sit out on the porch roof with my friends so we could “work on our tans,” as we used to say. The idea was to increase the effect of the sun with tanning lotion rather than block it with sunscreen.

I regret that the onset of the summer heat and more especially the humidity takes more out of me than it used to do. I’d love it if I had a personal air conditioner I could wear around my neck that would provide me with a cooling breeze when I need to be refreshed from the heat. Even so, there are some delights that nothing can spoil. Yesterday, as I walked past a wild rose bramble my nose caught the sweet scent of the tiny white blossoms snuggled into some trees by the side of the road. I stopped and inhaled, taking time to smell these very special June treats. The present moment joy is what matters, not the prospect of discomfort, and at least I do have the benefit of the air conditioner in our apartment. Indeed, what is can possibly be so rare as a day in June when it brings me gifts like the wafting glory of these tiny June treats.

The Importance of Self Care

As children we are often told to be kind, to be sharing and giving, and to show our love to others by how we treat them. We are seldom told to care for or to love ourselves. I remember as a child sending for a nurse kit from Quaker Oats. It was advertised on a radio program I listened to every weekday. I liked the idea of being a nurse. It was a way to care for others, as I was told to do. After my little kit came I bandaged up my teddy bear and treated him to a hospital stay as I played nurse in my little white cap and apron.

As young people we feel invulnerable; we can go for a night without sleep and hardly notice. Unless we have allergies or some medical condition, eating whatever we like is the rule rather than the exception. We seldom need to sit and rest after exertion but can continue on as if we were made of steel. I was in my late forties when I began to realize I could no longer treat my body as if it were some kind of machine that could go on and on.

I began to notice that if I didn’t pace myself I would need to slow down or even stop in the middle of my efforts to get everything done. This bothered, even annoyed me. I didn’t like to stop. I wanted to do what I wanted to do when I wanted to do it. Then I had a real wake-up call: I got an excruciating pain in my neck and shoulder that wouldn’t go away. It took a number of chiropractic treatments and a lot of rest before I was able to move without hurting. The experience was extremely unpleasant. I finally got the message: I had been treating my body badly, and I needed to change my attitude.

First and foremost I realized I heeded to stop and rest between efforts. I also began to notice that when I ate certain foods I was uncomfortable; when I didn’t get enough sleep I was dragging. While this annoyed me, I had to admit it was important information. I realized that while it was strong and able my body needed a different kind of attention. Rather than treat it offhandedly as a machine that just needed fuel and occasional maintenance, I needed to treat it kindly, as if it were a faithful animal that was carrying me where I needed to go. I also had to accept its messages as needs and wants rather as impediments to what I wished to do when I wished to do it.

The importance of my self care grows with each passing year. Movement I used to take for granted has become an effort. There are even things I can’t easily do at all any more. But what is more important is that I remember to do what I need to do for my comfort as well as my health: Rest between efforts, meditate, take time to sit with my feet up, put in my eye drops, drink enough water, eat enough fiber, avoid what I can no longer comfortably digest. My list could go on and on, however I’ve made my point. Self care matters. More importantly, remembering to care for myself means I can continue to care for others, and that most of all is a good reason to do so.

More Than One Mother

In my life I have been fortunate to have some remarkable women friends who in certain ways could be considered in the light of mothers. Their age had little to do with it. It was their warmth, their acceptance, their caring and their love that helped to create the part they played in my life. I loved my late mother dearly, however there were aspects of her nature that were difficult for me to deal with, and while she was well meaning and did her best to be a good mother, she could not be everything I would have wished her to be. In my adult life the physical distances between us through the years also created a problem.

The depth of her compassion and acceptance were a special feature of one of the women who served my needs in a way my mother could not. We shared many of the same interests and in a climate where I had little support, she was very encouraging to me in my efforts to learn and to grow. She would frequently invite me to lunch and we would spend many hours in conversation about a variety of subjects. She had a wide range of knowledge and very little prejudice. She was also warm in a way my mother was not.

My own mother was a very good artist and once her family was grown devoted her life to her art. She had her own gallery and her paintings were admired and purchased by people from all over the globe. However, she and I had very little in common in our interests. Our telephone conversations were usually about what she had been doing or what my children were up to.

Another of my mother figures was also an important teacher in my life. Married at eighteen I had no work experience. As a result of studying with this person I gained a way to earn a living as well as a way to be of help to others. She took a personal interest in me and allowed me to assist her in many ways. I found in her a lifelong person to admire and look up to even after she moved away. She was a wonderful teacher and a good friend. My mother, who tried in vain to teach me to knit often said she was too impatient to teach me anything. However I am still thankful she was kind enough to pay a neighbor to give me sewing lessons.

These are only two of the special women who were also maternal figures in my life. It takes nothing from my original mother to think of them in this way because they filled roles that she could not. No single individual can be all things to another whether as a parent, sibling or spouse. Yet we all may play roles in one another’s lives to be of help and to fill in the gaps that our actual mothers might not have been equipped to do. I am always extremely grateful to my mother who worked so hard to raise and in her own way mother me. I am also very thankful to those others who gave of themselves to me with love and acceptance in their hearts.

 

Easter Time Remembrances

Rabbit in Cabbage 2While I am quite fond of them now, as a child I disliked eggs intensely. I vividly remember sitting in front of an eggcup containing a boiled egg and staring at the hateful thing as it grew cold. The rule was that I couldn’t get up from the table until I had finished whatever meal I was supposed to be eating. Sadly, I hated to sit still and perhaps would have been termed hyperactive if such a term had existed then. However, sooner or later I suppose I must have swallowed the contents of the eggcup and been released from my chair. The eating of it is not recorded in my memory.

While I certainly have some happy Easter memories I also have one that is not so. However, it is still vivid in my mind even after the many years filled with all the things I surely have forgotten. This was during World War II. My parents kept chickens, both for eggs and for food. We had quite a large flock of hens, and as I recall a rooster or two. There were times when they laid many more eggs than we needed. As anyone who has kept them will know, chickens lay in cycles, sometimes more sometimes less. When we had overage, my parents would sell the eggs to friends and occasionally to acquaintances.

This particular Easter I might have been eight or ten. My parents had too many eggs and decided to have an Easter egg hunt. All of their friends and most of their acquaintances had children so there were plenty of guests anticipated. The adults would have cocktails while the children hunted for eggs, and the person who found the most got a prize. While they hid them, I was told to stay in my room so I would not see where they were. Later they decided I ought not to participate because it was up to the guests to find them.

Fast forward to a happy memory: When my oldest daughters were grown enough to know about the Easter bunny they decided there ought to be one for the parents. Their father and I hid candy eggs for them and their younger siblings in various places in the house. Each year they in turn spent their own money for candy eggs for us and hid them in the kitchen, having told us it was off limits to hide eggs. Their delight as we hunted was a great joy, and what fun we had uncovering the Parent Easter bunny’s gifts.

Holidays often trigger memories of times gone by. These can be a treasure to hold and caress, most especially if they concern any who have passed on from this life. If there is sadness for us in them, perhaps it can be tempered by the happiness of our recollections. The most precious memories are those that remain for us to recount and perhaps to share with those who come after us. I once recorded my father on tape telling me about the chickens he had as a boy. There were only a few and they didn’t last long. Perhaps they were the inspiration for the ones he had as an adult that laid the eggs I so disliked yet remember so well.

A Recipe for Unexpected Guests

Spring blossoms, whiteIt makes me laugh when it gets cold after a warm day and someone says, “What’s happened to spring? It’s winter again!” That’s what spring is: a back and forth time of year. One day it’s lovely out, the next it snows. It’s difficult to make plans. Once many years ago my father decided to give an Easter egg hunt in the house he had inherited from my great aunt Alice. He invited all the members of an extended family of 12 children grown and married with children of their own, and told them all to come at one o’clock on Easter for the party. Then he went to Maine, intending to return that morning.

At eight AM that day it commenced to snow furiously. By twelve it had pretty much stopped, however my father, having been snowed in was still in Maine. I was faced with hosting a party for a large group of people I had never met not to mention hiding the eggs, providing the food, and being gracious. I called a friend and together we managed to pull off the party. I was rather put out with my father who very cavalierly said, “Oh, I knew you could handle it.”

For as long as I have known him, Stephen, like my father has been prone to spontaneously invite people over for a meal. Confident in my ability to come up with something on the spur of the moment, he doesn’t hesitate to play the host, and to be honest, I can say I have never minded. I love to cook and it gives me pleasure to provide for my friends or even for strangers who may become friends. The trick is to have certain things on hand that I can rely on to fix quickly and easily to feed two or more guests. Potatoes to bake and serve with sauce and cheese, shrimp in the freezer–a quick fix for shrimp scampi. Another is cooked rice for the following recipe.

Chinese fried rice works wonders as a quick meal. Of course you must have the simple ingredients on hand. The secret of this dish is that it must be made with leftover rice. Very quick to fix, it is popular with most. To serve four, use a cup of cooked rice per person, one egg, half a cup of frozen peas, half cup of chopped onion, half a cup of chopped celery, and 2 Tablespoons soy sauce or Dr. Bronner’s Mineral broth. If you have any leftover chicken, or extra firm tofu chop a half a cup of that too. 2 or 3 sliced garlic cloves and 2 or 3 Tablespoons ginger in thin strips is good too.

Take a half a cup large or extra large shrimp per person from the freezer, and thaw briefly in warm water. Peel if necessary and line up on a cookie sheet. Bake at 425 for 5 or so minutes. Scramble the egg without any extra liquid and fry in some oil or butter. Set aside. In a large frying pan, sauté the ginger, garlic, onion and celery in oil until transparent. Stir in the rice and cook 5 minutes stirring. Add the peas, the egg, broken up, tofu, chicken and shrimp. Stir in the soy sauce and cook 5 more minutes stirring occasionally. Voila, Dinner is served.

Spring Is Making Its Way

Blue flowers and stone wallWhen spring comes, like the creatures in the woods and fields, I feel as though I am beginning to wake up after a time of hibernation. I want to get out doors and spend more time in the light. I welcome the brightness that comes in through the windows even though it also shows the accumulation of dust that is so easy to miss in the dimmer light of winter. I get out of bed more eagerly, most likely because the sky is brighter when I do. Spring also brings me memories of what it was like for me when I was a child and the seasons were more defined by what we ate as well as what we did.

Growing up I spent much of my time out of doors. My mother believed the fresh air was good for me. As well she wanted me to be active rather than sit with my nose in a book. Whenever the weather was relatively decent, neither raining, snowing nor windy and cold, I was sent out doors to play. I grew up in the country on a property that belonged to my great aunt Alice, with a good bit of land to it. Thus I could wander to my heart’s content in the fields and marshes that surrounded her large house and our cottage.

When the spring came and the ice receded from the marsh, I would trek about looking for interesting objects that the sea might have delivered during a winter storm. Once I discovered a large log, perhaps three feet or more in diameter that formed an interesting place to play. Another time I found a pane of glass with a lovely blue design on it that was yellow on the underneath. Thinking back I can see it still. It was probably once part of a picture frame. Sadly one day it disappeared, as did the log I liked so much.

Spring also meant there was more daylight time after school to play out of doors. As I wandered around, I made up all sorts of stories in which I imagined myself having some kind of an adventurous part. Although I had no one to play with I was good company for myself, and my active imagination helped me to create all sorts of fun. I was alone but never lonely. Being on our own property I was completely safe as well. It seemed to me that I had a little kingdom all my own to enjoy. Spring brought new opportunities for adventures as well as the chance to be by myself with no one to tell me what to do.

My brother lives in the house we grew up in and whenever I visit with him I marvel at how much smaller the property seems to me now. Too, the days seem far shorter than they did when I was a child, when Saturdays especially seemed to hold endless hours in which to enjoy myself. I greeted the advent of spring with joy because it meant I could get out and explore the surrounding fields and marsh in search not only of adventure but also of signs of the new growth that spring would bring to share with me.

Saving What Is Useful

useful bags.jpg  When my mother and I went to Russia in 1991 among the places we visited was the Hermitage Museum in St. Petersburg. It was very impressive. My favorite part was the room with six Rembrandts. Sitting among them was an extraordinary experience. As we left we bought some postcards and other souvenirs and when none seemed to be forthcoming, asked for a bag to put them in. The cashier gave us a sour look then finally dug out a used plastic bag– an obvious treasure from her hoard and placed our items in it. Recycled bags were more common there than new ones were then.

I certainly do save and either use or recycle lots of plastic bags, however I have a stash of various sizes of paper bags as well as small gift boxes that threatens to erupt from its container. Some are saved for when we give people gifts. The ones with decorations for Christmas or birthday, for instance come in very handy. Others with no decorations or simply printed with the name of a store can be used for any occasion, and also for carrying things. I only wish I knew just how many of these decorated bags I would need in the near future so I could pass some of them on to others.

I simply cannot bear to throw out anything that is ultimately useful. Take for instance the elastics that come on things. I haven’t bought any rubber elastics for years. They come in various sizes, shapes and colors, mostly on vegetables. The small bag I have stays full because what I use gets replaced. Twisty ties are something else I tend to save. They too come in various lengths and are useful for tying up many things as well as substituting for the difficult to reuse flat plastic closures most bread bags come with. The long ones are good for wrapping around electric cords and small tools.

I seldom use paper towels unless I want to clean up a mess, thus saving paper. I tear appeal letters and ads for insurance and so forth on 81/2 by 11 sheets with a blank side into thirds, pinch them together with a clip and use them to make my grocery and “to do” lists. Smaller scraps of paper become notes, though I have to be careful not to lose those. String of any length of course gets reused, as does ribbon, and of course wrapping paper. Unless it’s torn, I fold and save Christmas and birthday wrapping paper, as did my parents.

Being of a saving nature runs in my family. My father once told me he found an envelope among his mother’s things with bits of string in it labeled “pieces of string too small to use.” However I have since heard this story from other sources, so it may have been something he borrowed rather than experienced. My mother, my father, my grandmother and my other relatives all followed the Yankee thrift rule: recycle, reuse or do without, so it’s not surprising I developed this habit and needless to say as I have discovered, passed it on to my children.

Thoughts from a Thrifty Cook

Tasha's Fridge 1My mother felt strongly that food was precious and not to be wasted. She had been a young child during World War I in Germany, and the experience of scarcity had shaped her attitude. To her way of thinking, all food was to be used up one way or another. Then came World War II and rationing. I too was very young, yet this also gave me lessons in thrifty use of food. Fortunately I have been able to put my early lessons to good use in learning how to create meals from whatever I have left over even if I hadn’t already planned ahead.

A chicken, for instance normally provides two people at least three meals: hot, cold, and soup. That’s easy, but what about the bits and pieces of vegetables, meat, fish, or even pasta that might otherwise molder in the back of the ‘fridge. Why not make a soup, or combine them in a quick stirfry? If your family is fussy about food you probably can’t do that, however a retired couple like us, or even a single person may find it fun to experiment. One warning: it is important for the leftovers from the originals to make good combinations. A curry and a chili won’t mix well.

To use up most leftover vegetables, sauté half an onion until soft and then tip in whatever you have. This freshens the taste and makes them seem like a different dish. Add half a box of chicken or beef broth and serve this as a soup with a salad for supper. Throw in a handful of uncooked pasta of your choice and simmer or add leftover rice for a heartier dish. Or combine the vegetables and the rice or cooked pasta, sprinkle on curry powder, voila, another meal. Cook any leftover hamburger or some other chopped up cooked meat and add to the simple stirfry for a more filling lunch or supper. You can also cover it with leftover mashed potato, pop into the oven and have a shepherd’s pie.

I often use some of that convenient boxed coconut milk to season my leftover vegetables. Or in the summer I may add some salad dressing and toss them with lettuce, chopped sweet onion, and whatever else you like for a cold meal. Adding some canned salmon or tuna makes a more filling meal. The coconut milk is also very tasty with leftover chicken stirfry or soup. Simply chop up what you have, add whatever vegetables you like and warm them all up together with either leftover or freshly cooked rice. For soup, add chicken broth.

Whenever I make rice I make enough so I have some left over. I like to use it to make what I call Pudding As Rice: Per person use ½ cup rice, 1 Tbs butter, 1 Tbs brown sugar, about a half cup or so mixed dried fruit of your choice—brown and white raisins, dried cranberries, cherries, dried pineapple, or whatever else you fancy. Mix and cook together over low heat 15 minutes or so, stirring occasionally until all is mingled into a tasty mix and serve with almond, coconut or dairy cream poured over it. Or instead, combine it with fresh or canned fruit. This simple dessert pleases almost everyone.
